Ingredients for olive bread with rosemary recipe:

  • 500 grams of strong flour
  • 50 grams of extra virgin olive oil
  • 3 tablespoons of extra virgin olive oil
  • 5 grams dry yeast
  • 300 grams of water
  • 1 sprig of rosemary finely chopped
  • flake salt

Development step by step:

  1. In a large bowl, mix all the ingredients, except the salt flakes and the three tablespoons of olive oil, until they are integrated. It is important to only mix, not to knead.
  2. Cover the mixture in the bowl with a cloth or transparent paper, and let it rest for 1 hour.
  3. Once this time has elapsed, place the mixture on a previously floured flat surface and begin to knead vigorously until a smooth, fine and manageable texture is obtained.
  4. Brush a tray with a little olive oil, roll out the dough, cover with transparent paper and let it rest for another 1 hour.
  5. While we wait for that time, brush a loaf pan and then place the dough on it. Add the three tablespoons of olive oil over the dough and spread it evenly. Let stand for 30 minutes.
  6. Spread a handful of flake salt.
  7. Preheat the oven to 220 degrees. Introduce the mold and cook for 30 minutes. Remove from the oven, unmold and let the bread cool before consuming it.

Olive oil soup with cockles

If you want an easy and simply delicious recipe, you have to try this one.

Ingredients for olive oil soup:

  • 1 kg. of cockles
  • 5 dl. extra virgin olive oil
  • Water
  • 1 leek

Development step by step:

Cook the cockles for 1 minute, and remove just when they start to open. Remove the shell and reserve the mollusk. Save 20 cockles for the garnish.

Introduce the remaining 20 cockles in the Thermomix, with a little water until they are covered. Purée the hot cockles and emulsify with oil at medium speed. Strain the soup. Cut the white leek into very thin slices and fry in a lot of oil.

Finally, add a portion of soup to a soup bowl. Garnish with five cockles and fine leek.

Olive oil yoghurt

We all know and have tried yogurts of many flavors, but have you ever seen an olive oil yogurt? It may surprise many of you, but it is delicious! We tell you how to prepare it:

Ingredients for olive oil yogurt:

  • 50 g of extra virgin olive oil
  • 50 g of water
  • 20g sugar
  • 20g isomalt sugar
  • 40 g creamy yogurt (Greek type)

Development step by step:

  1. Put the water and the two varieties of sugar in a saucepan, heat slowly and cook until you obtain a light syrup. Then let it cool down.
  2. Put the syrup into the blender jar and add the yogurt and extra virgin olive oil. Mix and emulsify with the blender until you obtain a homogeneous and fine cream: the olive oil yogurt.
  3. And voila! Our olive oil yogurt is ready, perfect to serve as a delicious sauce to accompany our dishes.

Note: If you have already prepared the olive oil yogurt and you are not going to consume it right away, cover and store in the refrigerator.

Olive oil and orange sponge cake


Ingredients for olive oil yogurt:

  • Flour 220 g
  • Sugar 150 g
  • Baking soda 1/2 teaspoon
  • Chemical yeast 1/2 teaspoon
  • Pinch of Salt
  • Milk 300 g
  • Mild olive oil 300 g
  • Eggs 3
  • Orange zest 1 and 1/2 tablespoons
  • Orange juice 125 ml

Development step by step:

  1. Grease a mold well and line the bottom with parchment paper. Preheat the oven to 180º.
  2. Next, separate the ingredients into two large bowls: One with the wet ingredients: milk, olive oil, eggs, and orange zest and juice. And in the other the dry ones: flour, sugar, salt, baking soda and yeast.
  3. With a hand mixer, mix the contents of the bowl of liquids, without needing to beat it.
  4. Once there is a homogeneous mixture, add the contents of the bowl of solids and continue mixing until it is integrated.
  5. Pour the batter into the mold and bake for 45 or 50 minutes or until a toothpick inserted into it comes out clean.
  6. Let cool and unmold.

Olive oil, avocado and tomato toasts
